Recipe - Tandoori Prawns with Mango & Cucumber Salsa
- In a bowl, combine yogurt, tandoori masala, ginger-garlic paste, lemon juice, oil, and salt.
- Add the prawns to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
- In a separate bowl, combine diced mango, cucumber, red onion, and green chili (if using).
- Add lime juice, salt, pepper, and chopped mint leaves. Mix well and set aside to let the flavors meld.
- Preheat your grill or a grill pan over medium-high heat.
- Thread the marinated prawns onto skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning).
- Grill the prawns for 3-4 minutes on each side, or until they are cooked through and have nice grill marks. Remove from heat.
- Arrange the grilled prawns on a serving platter.
- Spoon the mango and cucumber salsa over the prawns or serve it on the side.
- Garnish with fresh cilantro leaves.
